Why doesn't the compass screen appear on my watch?

The compass screen is only present on watches that have the required sensors.

For Watch OS, only watches as of the Apple Watch 5 series have them.

For Wear OS, this depends on your watch model. Some watches offer this feature while others don't. This information can be checked on the website of the manufacturer of your watch.
